Chocolate & Banana Bread 

Dairy & Refined sugar free! 

 

 

Here we have the perfect chocolate fix without any of the naughtiness. In fact, raw organic cacao is packed with antioxidants, is a plant based source of iron & magnesium, & just a good old mood booster!

You could also make this recipe gluten free by replacing wholemeal flour with coconut or an almond alternative.

This is also a great way to use up those ripe bananas!

 

Ingredients:

For the bread: 

1 cup of wholemeal flour

½ cup organic raw cacao powder

1/4 cup coconut sugar

2 tbsp coconut oil (melted)

½ tsp baking powder

3 medium eggs

2 ripe bananas

1tbsp cinnamon

 

For chocolate sauce:

½ Cup organic raw cacao powder

100ml of almond milk

1 orange/sastuma

 

To decorate:

Walnuts, chia seeds, orange zest, (anything you like).

 

Method:

Grease a loaf tin with a lil’ coconut oil or line with greaseproof paper

Pre-heat the oven to 180 degrees

Mix dry ingredients together: flour, coconut sugar, baking powder, cinnamon & cacao powder

In a separate bowl, mash bananas, add eggs & coconut oil

Mix wet & dry ingredients together to form batter consistency

Pour into loaf tin & bake for 35 minutes

 

Chocolate sauce:

On a low heat, whisk cacao powder & almond milk in a saucepan

Grate in the zest of an orange peel & squeeze in a good amount of the natural orange juice.

Stir until a thick chocolate sauce consistency is made & leave to cool.

Remove baked cake from oven, prod a few air holes through the top with a fork leave to cool.

Once both cake & sauce have cooled, pour chocolate sauce over top of cake & allow to it ooze into gaps made with fork holes. (Mmmmm oooozy chocolate sauce!) 

Sprinkle cake with remaining orange zest & any desired topping ….
